Recipe

Ingredients (3-4 Servings)

1 LB LARGE SHRIMP, PEELED AND BUTTERFLIED
1/2 CUP FLOUR
1 CUP UNSWEETENED COCONUT FLAKES
1 CUP PANKO BREADCRUMBS
3 EGGS
1/2 TSP SALT (used @sea.salts.of.hawaii)
1/2 TSP PEPPER
CANOLA OIL
ORANGE MARMALADE (used @tiptreephotos)
HONEY

Instructions

Fill a large pan with about and inch of oil. Heat to 350 degrees.

Add flour, salt and pepper to a bowl. Mix breadcrumbs and coconut flakes in another bowl, and beat eggs in the last bowl.

Dip each shrimp in flour, egg, then breadcrumb mixture.

Fry for a few minutes until golden brown, flipping halfway through.

Serve with orange marmalade and desired amount of honey mixed in.
