Cô Chi’s Rotisserie Chicken (Gà Roti)
It’s so interesting to see how generational recipes evolve over time with either regional ingredients or faster methods. My aunt Chi’s version involves an air fryer, but if you don’t have one, a good old fashioned oven works too. I also swapped out the Maggi Seasoning to try the new #maggimarketplace bases.

Ingredients (6 Servings)
6 CHICKEN THIGHS, SKIN ON
2 TSP SUGAR
2 TSP OIL
1/2 TSP ALL SPICE
1 TBSP GARLIC, MINCED
1/4 CUP YELLOW ONION, CHOPPED
1-2 TSP MAGGI MARKETPLACE BEEF BASE (OR 6 TSP MAGGI SEASONING)
1 TSP OYSTER SAUCE
1 TSP SALT
1 TSP PEPPER
Instructions
Combine all ingredients (except chicken) in a bowl and mix well. Place chicken in a ziplock bag and shake/massage to combine. Leave to marinate overnight.
Place chicken in an air fryer set at 350 degrees for 20 minutes skin side down. Flip and cook for an extra 10-15 minutes until browned and crispy.
Serve with rice and a side of tomatoes and cucumbers.
