Chicken Ginger Rice Porridge
There’s only 5 ingredients in this Instant Pot Congee. Totally a set it and forget it kind of recipe. Perfect for breakfast, upset tummies, or to cure the sniffles.

Ingredients (6 Servings)
3/4 CUP OF JASMINE RICE, WASHED
2 CHICKEN BREASTS, SKINLESS AND BONELESS
1 TBSP OF GINGER, THINLY SLICED
6.5 CUPS OF WATER
SALT
Instructions
Add cleaned rice, water, chicken and ginger to an instant pot and set for 30 minutes high pressure. Allow for natural pressure release before opening.
If it’s still too watery for your taste, switch to sauté mode to thicken. Shred the chicken with a fork directly in the pot.
Add salt to taste, or just serve with soy sauce. I topped my bowl with green onion, some bomb chili oil from @swoopsbystella, and fried garlic.
