Broccoli Cheddar Cakes
I had some leftover broccoli so I made these keto friendly cakes. They’re satisfying and savory. Great as a simple light lunch or a side dish to accompany some seafood or meat.

Ingredients (6 Cakes)
2 CUPS BROCCOLI, BOILED
1/2 ONION, FINELY CHOPPED
2 CLOVES GARLIC, MINCED
3/4 CUP PANKO BREAD CRUMBS
2 EGGS
3/4 CUP SHREDDED CHEDDAR CHEESE
EVOO
SALT
PEPPER
Instructions
Preheat oven to 400 degrees. Heat some oil, onion and garlic in a pan until browned. Set aside in a large bowl.
Boil broccoli if you haven’t already, then chop (if you’re using frozen, defrost and drain any liquid). Add to bowl with onion and garlic along with bread crumbs, eggs, cheese and a pinch of salt and pepper.
Form mixture into 3-4 inch patties and place on a pan lined with parchment paper or oil. Baked for 15 minutes, then flip and bake for another 10.
