Spicy Cold Noodles (Bibim Guksu)
Summers are always scorching in LA so cooking anything feels like a lot of work. But if you have to, these refreshing Korean cold noodles will cool you down in a jiffy. This 15 minute recipe from @maangchi really hits the spot on a hot day.

Ingredients (2 Servings)
1/2 CUP KIMCHI, CHOPPED
1/3 CUP KIMCHI JUICE
1 GARLIC CLOVE, MINCED
1 TSP SUGAR
1/4 CUP KOREAN HOT PEPPER PASTE
2 TSP TOASTED SESAME OIL
2 TSP VINEGAR
1 TBSP ROASTED SESAME SEEDS
1 CUP CUCUMBER, THINLY SLICED
1 EGG, BOILED
2 BUNDLES OF SOMEN NOODLES
Instructions
Cook noodles according to instructions on package.
While waiting, prep ingredients and add kimchi and juice, garlic, sugar, hot pepper paste, sesame oil, vinegar, and sesame seeds to a large bowl and mix well.
When noodles are done, strain and wash with cold water. Add to the bowl with kimchi mixture and toss with your hands until combined.
Top with cucumbers (my husband hates them which is why you see micro greens here lol) and boiled egg.
