Pineapple Fried Rice

I had to use a pineapple, so here’s a fancy looking, Thai-inspired, vegetarian version of one of my lazy day go-to’s: fried rice. Transport your family to the tropics with this meal 😉

Recipe

Ingredients (4 Servings)

3/4 CUP OF FROZEN PEAS AND CARROTS
2 EGGS, BEATEN
2 SHALLOTS, SLICED
3 GARLIC CLOVES, MINCED
4 CUPS COOKED WHITE RICE (it’s better if it’s a couple days old)
1 CUP PINEAPPLES, CUT IN BITE SIZES
3 TBSP FISH SAUCE
3 TBSP VEGETABLE OIL
1/4 CUP CASHEWS
1/4 CUP RAISINS
2 TSP CURRY POWDER
SALT TO TASTE
SQUEEZE OF LIME

Instructions

Slice pineapple in half and carve out one side to use as a bowl. Cut the meat in bite sizes for the rice.

Heat vegetable oil in a pan and sauté shallots and garlic until translucent. Add rice, frozen vegetables, fish sauce and stir to cook for a few minutes then make a hole in the center and add beaten egg. Stir the egg occasionally until it’s cooked, then mix everything together. Add curry powder, raisins, nuts and pineapple and salt to taste. Stir well until combined, about 5-10 minutes.

Serve with a squeeze of lime and Sambal Oelek.
