Pesto Pasta
How do you get your kid to eat more veggies You hide them in plain sight. Also, pasta helps. Note: This works on husbands too.

Ingredients (4-5 Servings)
1 (16OZ) PACKAGE OF RIGATONI
1 CUP OF FROZEN PEAS
1 YELLOW ONION DICED
2 TBSP EVOO
1 TBSP LEMON ZEST
JUICE OF ONE LEMON
1/4 CUP PARMESAN CHEESE
โ1 Cup Pesto Sauce
2 CUPS WILD ARUGULA
2 TBSP CASHEWS
1/2 TSP SALT
1/2 CUP EVOO
1 GARLIC CLOVE
1/4 CUP PARMESAN CHEESE
You can you any pasta of your choice. I also think cherry tomatoes would work well instead of peas for some more brightness to counter the bitter/peppery taste if the arugula
Instructions
Cook pasta according to instructions in a pot with some salt and oil. While waiting, combine all ingredients for pesto sauce in a blender and mix until smooth. Prep and cook onion in EVOO with a sprinkle if salt and ground pepper in a deep pan. Add in pesto sauce and peas and cook for about five minutes.
When pasta is done, transfer directly into the pan with the sauce. Add half a cup of pasta water and mix well until sauce is thickened. Add lemon zest, cheese, and lemon juice. Serve with cheese to garnish and more lemon juice if desired.
