Healthy Banana Cranberry Blender Muffins

When you’ll find me baking:
1. I need an activity to keep my daughter busy
2. I have overripe bananas I need to use (if you haven’t noticed, nearly all my sweets use banana 😂)

Recipe

Ingredients (6 Muffins)

1 CUP INSTANT STEEL CUT OATS
2 TBSP HONEY
1 EGG
1 RIPE BANANA
1/2 CUP SOUR CREAM
3/4 TSP BAKING POWDER
1/4 TSP BAKING SODA
1/4 TSP VANILLA EXTRACT
PINCH OF SALT
1/4 CUP DRIED CRANBERRIES

Instructions

Set oven at 400 degrees.

Add all ingredients except for cranberries in a blender. Blend well. Fold in cranberries.

Drop into oiled/lined muffin tin. Bake for 15 minutes. Cool then serve.
