Ingredients (6 Muffins)
3 EGGS
1/4 CUP MILK
1/4 TSP PEPPER
1/8 TSP SALT
2 OZ SMOKED SALMON, HAND TORN
3 TBSP CRUMBLED GOAT CHEESE
1/4 BELL PEPPER, CHOPPED
HANDFUL OF SPINACH, BLANCHED
Salmon, cheese, and veggies are all interchangeable!
Instructions
Prep ingredients accordingly.
Whisk the eggs, milk, pepper, and salt in a bowl. Stir in remaining ingredients.
Fill a lined muffin pan with the egg mixture (if you donβt have silicon liners, spray with oil). Bake in oven at 375 degrees for 10 minutes. Thatβs it! Store in your refrigerator for a few days or freeze from later.
