In a rush and want a quick breakfast or snack fix that will last for days? These adaptable mini frittatas are a convenient way to pack in some portable nutrition.

Recipe

Ingredients (6 Muffins)

3 EGGS
1/4 CUP MILK
1/4 TSP PEPPER
1/8 TSP SALT
2 OZ SMOKED SALMON, HAND TORN
3 TBSP CRUMBLED GOAT CHEESE
1/4 BELL PEPPER, CHOPPED
HANDFUL OF SPINACH, BLANCHED

Salmon, cheese, and veggies are all interchangeable!

Instructions

Prep ingredients accordingly.

Whisk the eggs, milk, pepper, and salt in a bowl. Stir in remaining ingredients.
Fill a lined muffin pan with the egg mixture (if you don’t have silicon liners, spray with oil). Bake in oven at 375 degrees for 10 minutes. That’s it! Store in your refrigerator for a few days or freeze from later.
