Curry Rice (Ka Re Raice)

Had to make some Korean Curry Rice to enjoy with a fresh batch of @ommas_kimchi. This dish practically makes itself mainly because the curry packets come pre-made and the instructions are on the box! Below are just a couple adjustments I made.

Recipe

Ingredients (4-5 Servings)

1 WHITE ONION, DICED
1 LARGE CARROT, SLICED
2 LARGE POTATOES, CUT IN LARGE CUBES
1 LB CHICKEN OR BEEF, CUT IN BITE SIZES
1/2 CUP FROZEN PEAS (optional)
2 CUPS WATER
1 (3.2 OZ) PACK S&B GOLDEN CURRY
2 TBSP VEGETABLE OIL

Instructions

Prep ingredients. Add oil, meat, onion, carrot, and potato in a pot. Cook for 5 minutes on high heat.

Add water and cover and simmer for 15 minutes.

Break up the curry packet along the grooves and add to the pot along with peas if using. Stir and cook on medium heat for another 5 minutes until thickened.

Serve over rice with kimchi.
