Caribbean Spiced Wings with Red Beans and Rice
For anyone who loves spice, these air fryer wings are for you. They pair well with a citrusy kick like Trader Joe’s Yuzu Kosho Hot Sauce. This meal uses mostly pantry staples and you'll spend more time waiting than working!

Ingredients (2 Servings + Extra Rice)

1 LB CHICKEN WINGS
1/2 TBSP GROUND CORIANDER SEED
1/2 TBSP CINNAMON
1/2 TBSP CAYENNE PEPPER
1/2 TSP NUTMEG
COCONUT OIL
PEPPER
SALT
—Rice
1/2 ONION, CHOPPED
1 RED BELL PEPPER, CHOPPED
4 GARLIC CLOVES, MINCED
3 CUPS WHITE RICE
3 BAY LEAVES
2 TBSP TOMATO SAUCE (paste would be better, but didn’t have any)
1 TBSP CUMIN
1 TBSP PAPRIKA
2 TEASPOONS SALT
3/4 CUP KIDNEY BEANS, RINSED AND DRAINED

Instructions
Season wings with salt and pepper and let sit for 30 minutes.
While waiting, sauté onion, bell pepper and garlic in oil in a pan until translucent. Add rice, tomato sauce, cumin, paprika, salt, beans and bay leaves.
Sauté for a couple minutes before adding mixture into rice cooker with about 4 cups of water. Set to cook (you can also cook the rice on the stove). While rice is cooking, combine the remaining spices for the wings and coat both sides. Brush with oil and place in air fryer at 375 for 25 minutes. Then adjust temperature to 400 and cook for another 5 minutes.
