Bố’s Fried Rice

My parents divorced when I was around 6 or 7 so my sister and I used to visit my dad at his house every so often. The only thing I remember him actually cooking for me during those years was this fried rice, but it was delicious. Always heavy on the pepper, I think that’s key. Looking back, this was such a bachelor’s meal lol.

Recipe

Ingredients (2 Servings)

2 CUPS DAY OLD JASMINE WHITE RICE
3 GARLIC CLOVES, MINCED
1 WHITE ONION, DICED
3 TBSP BUTTER
2 CHINESE SAUSAGE LINKS (LẠP XƯỞNG), THINLY SLICED
2 EGGS
1 TSP PEPPER
FISH SAUCE

Instructions

Melt butter in a pan on high heat and sauté onion until nearly golden brown, then add garlic for a minute.

Add rice (make sure the kernels are separated and not clumped together) and cook until slightly crispy. About 5 minutes.

Beat the eggs in a bowl and create a hole in the center of the rice. Drop in eggs and allow to cook for a couple minutes before folding in.

When egg is fully cooked, drizzle fish sauce all over and add sausage. Cook for a few minutes.

Finish with pepper and mix well before serving.
