Air Fryer Pork Katsu
Let’s be real: From marking two years into a global pandemic to the conflict in Ukraine and the humanitarian catastrophe it’s created, there has been little room to muster the mental and emotional energy to care about my Instagram cooking account since 2022 started.
But in an effort to maintain a personal goal of mine to document recipes…if there’s anything I can offer here today for anyone who simply wants a 20 minute, hassle and mess free meal idea, take a look at the recipe I used this afternoon to feed my family below. Because life continues even though you’re not ready for it.

Ingredients (4 Servings)
4 BONELESS PORK CUTLETS (OR CHICKEN BREAST BUTTERFLIED)
2 CUPS PANKO BREAD CRUMBS
2 EGGS
1 TSP SALT
1 TSP PEPPER
Instructions
Beat eggs in shallow dish. In another shallow dish, add bread crumbs with salt and pepper and mix well.
Tenderize pork cutlets with mallet until 1/4-1/2 inch thick.
Dip in egg mixture on both sides. Dip in breadcrumbs until covered well.
Add into an air fryer that’s been oiled on the rack. Fry for 10 minutes at 350 degrees. Flip and fry for another 8-10 minutes at 375 degrees until golden brown.
Serve with Tonkatsu Sauce.
